Ingredients

  • Quince (1,5 kg)
  • Sugar (600 g)
  • Water (0,5 l)
  • Apple vinegar (2,5 dl)
  • Skin of a half lemon
  • Spices of your choice (cardamom, star anise, peppercorn)

Recipe

  1. Clean and cut into slices.
  2. Boil until they are a bit soft. approximately 20 min.
  3. Let them cool off and peel off the skin.
  4. Boil sugar, water and vinegar together. Add the quinces so they go completely soft.
  5. Clean glasses thoroughly with boiled water. Put the fruits and water etc. mix into the glass together with your choice of spices, (cardamom – peppercorn) and keep closed for up to a month.
